Apple Polish was one of the judges who judged Twilight Sparkle when she was performing her entrance exam at Princess Celestia's School For Gifted Unicorns. Her cutie mark was a red apple.
History
Era of Princess Celestia
Like the other judges, she seemed strangely scornful towards the filly. After the Sonic Rainboom super-charged Twilight, she was lifted by her magic. Once Twilight was comforted, the judges were dropped.[1]

Behind the scenes
Apple Polish had no spoken dialogue. Her animation model was a recolored version of Twilight Velvet with a color scheme similar to Wild Fire. Her cutie mark was a reference to how apples are often associated with teachers.
