We take all staff statements and opinions as canonical information, to at least some extent, though depending on the validity of it, we would put it under "Behind the scenes" since that's for real-world stuff, incl real-world statements that are inconsistent with what we actually see in the franchise, but presented as such. Therefore, we consider Sunset Shimmer canonically bisexual, and Rarity an Applejack worth noting as such as well. I understand if you don't see it that way, but that's always how we rolled with this stuff.
